1. Serves as an assistant to the Sous Chef and assumes complete charge of the operation during his absence.

Ensures that all kitchen personnel are operating within the scope of their duties and responsibilities and to the required standard of performance.

Prepares mis en place adequately for estimated business, supervises and coordinates in preparation of above mis-en-place.
Prepares all dishes in a fast, efficient sequence according to orders.
Supervises portion control, correct plating and garnish as well as the handling and storage of prepared foodstuffs and leftovers.
Assists the Sous Chef with special function planning and the scheduling of staff accordingly. May assist with the purchasing, receiving and storage of food items in conjunction with Food & Beverage Management.
Ensures that cleanliness and hygiene conditions of all work areas i.e. fridges, stoves, etc. schedules and controls of night cleaning shift.
Assists in the control of production cost i.e. food cost percentage and other kitchen controls as directed by the Executive Chef and Food and Beverage Management.
To have a good knowledge of all facilities of the property.
To maintain at all items the highest standard of personal hygiene, appearance and social skills.
To work in harmony with all staff and departments in the hotel.
To attend and be attentive to training as and when required.
To be familiar with the staff handbook, fire and safety procedures.
To perform any other duties as directed by your immediate supervisor.

To be available to work overtime when requested.
